What I Ate Wednesday

Hello all! Here’s another installment of “What I Ate Wednesday”. My choices this week were not on the healthier side, I realize that, but I’ve been working out much more often and for a longer period of time to compensate somewhat.

Also, I’m a week away from being done with the semester! If that isn’t a good reason to indulge and enjoy foods than what is?

Breakfast: I had rice cake chips instead of the actual cake because they were out at the store last time I went 😦 Still delicious! And I think I like the chips even better for adding toppings. I had chocolate rice cake chips with a little peanut butter and a banana slice on top. Very delicious and filling! I would even use this as a snack…

After breakfast I went and hit the gym. I didn’t feel like running… so I decided to do a cycling class! Boy did it kick my butt- literally. I couldn’t walk right the rest of the day after sitting on that bicycle seat for an hour.

Post-workout I had a delicious salad from the RPAC. It was spinach and prosciutto, with feta cheese, granny apple slices, nuts, and a strawberry vinaigrette. Definitely a new fave! I can’t wait to come up with my own version of this salad.

Later that afternoon I had my coffee 🙂 I downed it so quickly I forgot to take a picture! It was a light, frozen vanilla latte. As always, it was yummy. It’s my favorite drink and I have it every day. Next year I need an expresso maker to make it on my own! Coffee drinks on campus are too expensive for my poor college budget…

For dinner I also forgot to take a picture before scarfing down a homemade parfait. I used light vanilla yogurt, fresh strawberries, and cheerios as my granola. I loved the combination, and I plant to make it again later this week- this time with a picture though!

After dinner I had a snack wells treat. I love the vanilla creme sandwich cookies. The texture is just what I want. And for not being a vanilla fan, this treat does pretty well for itself. I would prefer Oreos any day, but these sandwich cookies take the cake.

I met with my bible study for the last time of the year last night… and I’m so glad I didn’t take pictures of the indulgences we had! There was an ice cream sundae bar and special double chocolate cake. I had WAY too much sugar, but I didn’t feel guilty because I know that one meal won’t make me fat. Just like another healthy meal won’t make me skinny. The key is moderation, and I felt like I moderated my intake of the sweets last night 🙂

Weekend Wrap-Up

First off, I’d like to say my prayers go out to the families and friends and the runners of the Boston Marathon. A true tragedy has occurred today. I can only pray that everyone heals of the injuries, both physically and mentally.

My weekend went by extremely fast, but it mostly consisted of relaxing and eating… Don’t you wish you could’ve joined?;)

Friday I had the opportunity to pull out my old prom dress to attend the Real Life Christian Cru Formal! It was held at the Ohio State Stadium (The Shoe) and was amazing! Ben was my date of course 🙂 We danced the night away in the swanky club in the Shoe. I felt like I was back in high school again. It was definitely a great evening, with fun that will not be soon forgotten.

Saturday I had every intention of waking up and going to Zumba… then stayed home and watched the Goonies instead. Who doesn’t love that movie?! Later Ben stopped over to hang out and watch me cook.

I attempted to make eggless cookie dough… But it was a fail. It tasted fine, but it was too sugary and lacked the consistency of normal cookie dough. Thanks but no thanks Pinterest for that recipe!

Later I made scones! I got the recipe from EatLiveRun.com. It’s amazing 🙂 They are full proof and mine turn out delicious every time! I use vanilla almond milk instead of heavy whipping cream and use my own mixings- like chocolate chips and dried cherries. Honestly, you could add anything you have lying around.

Later I made a kale salad. I got the recipe off The Chew. I included their picture to see how closely it resembles mine. Overall I loved how the kale tastes. I didn’t include the fruit, and I used walnuts instead of pine nuts. The recipe turned out really yummy and I snacked on it throughout the evening.

Sunday morning I did some more cooking! Before heading to Ben’s soccer game I whipped up a green smoothie. I put banana, orange juice, and kale in it. Ice cubes made it all frozen. It was actually really tasty! Future reference, I will blend it MUCH longer to be extra sure the kale gets ground up. I kept getting little chunks of it it my mouth…

Again, no workout Sunday.

My body needed a break… I was feeling sluggish and sore at the end of last week, and the two days off over the weekend was exactly what I needed to get rejuvenated. Now, I’m ready to go!

Weekend Wrap-Up

Happy Tuesday! Sorry I’m a day late with my weekend wrap-up AND my eating clean challenge wrap-up. (It’s exam week for me and studying took priority!)

Eating Clean Challenge: I really think this was a success! It has me now rethinking all the food choices I make. I still have cheats, but I plan them better. I also make sure about 80-90% of the food I eat every day is considered clean. I’m listening to my body’s hunger and making good choices 🙂 Food is for fuel, not comfort. I definitely encourage others to take a test run of eating clean and plan 1 week, only 7 days, of 100% clean eating and see the huge difference it will make!

And now for my weekend…

If you spent time with me Friday you would have enjoyed a nice run outside with me. It was a bit too windy, but overall running felt great 🙂 I also made the trek home for the weekend with Ben.

Saturday morning I got up bright and early for Zumba. It was my first time dong Zumba using my polar ft40 and I was really pleased. I knew Zumba burned 400-1,000 calories for people, and now I know how many calories I burn. My heart rate was definitely kept high during the entire hour. I was surprised at which moved brought my heart rate higher than others…

Saturday afternoon I had an awesome time riding the quad with Ben. We were way back in the woods and got to enjoy some of God’s amazing creations. Like waterfalls. Who doesn’t love waterfalls?!

Later that night I enjoyed a date night… Ben and I met up with his cousin and best friend to enjoy some Chipotle and Fro-Yo. Yes, eating clean at Chipotle was rough, but I went with a veggie burrito bowl without cheese or sour cream… I did put avocado on it! Yum yum! (Sorry no pic… I ate it too fast 😉 ) Next was fro-yo, which I always seriously enjoy. I got a lovely mix of strawberry and raspberry.

Sunday morning my family and Ben’s went to church together. Worship was excellent!

The rest of Sunday Ben and I hung out and goofed off… I cleaned up my stuff that I brought home from college (almost time to move home for the summer!) and we went on a walk to enjoy the weather. We even pulled out the golf clubs to practice our pitching 🙂

Fun Run Friday

Spring has finally arrived! For people in other states or even other parts of my state spring probably sprung a few weeks ago, but around here, warm weather just now showed up. Yesterday and today the weather has been gorgeous. I’m a fair weather runner, so I decided to skip the gym and hit the pavement.

Yesterday I discovered the beautiful Olentangy River Trail. The trail winds over and beside the river, giving the best views of both the city and the wilderness. I’m so excited that I found the trail (I knew it existed I just finally figured out how to get on it 🙂 ) and I plan on running on from now on!

I wish I had pictures to show of the beautiful river and wilderness on the trail, but my phone was tucked into its sleeve on my arm and I didn’t want to waste precious time trying to take it out and put it back in. Besides that, I had a good running groove and was hitting my pace very well. I knew stopping to take pics would ruin the run :/

I ran 5 miles yesterday for a fun run- and it was great! I kept my pace between 8 min and 8:30 per mile. That’s the pace I want to run for my half marathon, so I’m trying to adjust to the pace now.

Today for another fun run I hit the trail and did about 3 miles and walked for 3 miles. It was very windy today, and even though there was a higher temperature and sun shining, I felt very cold. So I decided to walk for 3 miles and enjoy the scenery. Sometimes you can’t always hit your goals of running the whole way, but always remember to listen to your body above all else! That’s exactly what I did. The cold made my body hurt, and I took that as a sign to stop pushing so hard and take it a little easier. There’s always tomorrow, right? 🙂

My clean eating week is almost half way over and I find myself craving fruit over candy. I love that! I think after this week is up I will definitely incorporate clean eating into my every day life. I’m probably not going to commit to 100% clean after this week, but I think I will stay eating clean for the majority of my meals. I’ll use my “cheats” for any chocolate treats I crave!
I love that this week has helped me realize how bloated I became from eating bad foods. Eating all of that processed junk was really messing with my body and changing the image I had of myself. I knew I was fit and fairly thin, but I didn’t see it so much until this week when I haven’t been constantly bloated and sluggish from the food I eat.

Food is for fueling. From now on I want to keep that in mind any time I reach for food. Is it fueling my body or hindering my progress? If it isn’t fueling my body in a healthy way, than why do I desire to eat that particular food?

Those are all questions I want to keep in mind from now on. I think it will really help to change my perspective of food for the better!

What I Ate Wednesday

How is everyone’s hump day going? Well mine has flown by! Here’s my mid week update of all the yummy food I’ve been enjoying while eating clean.

Today is day 3 of my clean eating week and I have been feeling really great! My energy is up (even without my coffee… trust me, I’m just as shocked as you!) and I can see that I’m a lot less bloated than normal. By the end of the day I especially notice that my bloating from eating all day isn’t as bad.

Now, everything hasn’t been all rainbows and sunshine. I have had some serious cravings. Also, to be honest I had a thin mint slip up yesterday that I would rather not talk about! But, overall I have been doing really well with nourishing my body with clean foods. The coolest thing I’ve noticed is that clean foods keep me fuller much longer!

Side note: Yesterday I enjoyed an amazing veggie burger with Ben at the Union. I don’t know if eating regular red meat again will taste as good after such a much healthier and tastier option like the veggie burger. The visit for burgers was impromptu, as was Ben’s visit to see me. A total surprise that completely shocked me!

We take the little things for granted like seeing your best friend every day… but when you haven’t seen your best friend for 2 weeks the surprise of them showing up at your dorm definitely improves the week! So, thank you Ben 🙂

So, I hope everyone takes a look around and says thank you for the small stuff and starts to appreciate everything. It will make your days much happier and you’ll feel the love I’m sure 🙂

Weekend Wrap-Up + Eating Clean Challenge

Does anyone else feel like the weekend went by too fast? The Easter celebrating and relaxing didn’t last long enough for me, unfortunately.

My Friday was very simplistic, yet totally awesome. If you spent the day with me, you would have enjoyed a fun day of running errands with my mom and sister. I’ve come to really appreciate the time I spend with them because I know that girl’s days like Friday don’t come around often!

We got lot’s of goodies for Easter Sunday dinner, I got myself a new bikini (it’s almost that time of year!), and I ended the day with an at home workout. We also dyed some lovely Easter eggs, which are in my previous post…

On Saturday I spent the day working. Not the most fun or productive use of my time, but I was happy to earn a little income- which doesn’t happen often. I decided that school would be my full time job during college, but I’m definitely reconsidering that notion.

If you could have spent Saturday afternoon/evening with me you could have joined me on a 5 mile run! Yes, I actually was able to run outside. The weather cleared up into a nice, sunny day. I bundled up a bit and decided to test my endurance. Overall I’m pretty happy with my 9 min. mile pace, but I will improving it to an 8 min. mile pace during the summer.

Sunday finally came around and I felt so thankful for everything God has been doing in my life. Easter was a day I reflected a lot on how fortunate we are that Jesus died for our sins. The idea that God was so selfless and Jesus was so brave and trusting is almost unfathomable. I feel so grateful to have a loving family and God leading my life!

Easter was spent mostly baking and cooking after church…

I got to pound out chicken with a skillet because we didn’t have a meat pounder, but I think it was more fun with the skillet. It made a crazy racket while I was pounding that meat though…

Sunday went by quickly and I was happy to spend it with the family. We all had a great day 🙂

That brings me to today: the first day of my week of eating clean!
So far I’ve had:

Breakfast of a rice cake with all natural peanut butter

Snack of mixed fruit and a banana pre-workout

Lunch was grilled chicken breast with potato

Snack was cuties and pistachios

Dinner of grilled chicken breast, potato, and corn

My thoughts? I’ve felt really great so far today! I’ll probably have one more snack before bed- either fruit or nuts… or both. I think I more energy during my workout today, and I didn’t worry about being sluggish or getting cramps.

Eating clean is a challenge, but I definitely came prepared for this week!

From home, I packed:

Apples, Bananas, Grapes, Cuties, Rice Cakes, Granola, Strawberries

From school I can get…

Grilled chicken, ham, fat free skim milk (but I’m trying to avoid dairy), vegetables like corn, carrots, green beans, etc.

I think planning ahead is the most difficult part of eating clean, but I’m doing it all from a dorm room, so anyone with a decent kitchen and grocery store nearby shouldn’t have a problem 😉

I think eating clean this week will improve my overall energy level AND get rid of any Easter bloating. I’m going through sugar withdrawal now because of yesterday. I figured that if I didn’t eat all my Easter chocolate yesterday, than I wouldn’t be able to for a week. So, I ate a lot. And when I say a lot, I’m talking an overdose on chocolate!
This week of eating clean is exactly what I need to kick my sugar cravings and chocolate habits.

Clean Eating Challenge

After my workout challenge that I had this week, I want to keep up the theme. I have a competitive drive, and that drive helps me to succeed.

So, the new challenge, if you accept it, will be to eat 100% clean for 1 week. This challenge will test my patience and my self control. I hope to have your support AND would love for you to take on this challenge with me! 🙂

I decided that this challenge would be great after the Easter holiday. I plan to begin my week Monday. I want to try this clean eating 100% thing because I want to see results. All I hear is how great clean eating makes people feel and how great people look from it. Well, I want in on it.

I don’t know if I can eat 100% clean my whole life, but I figure committing for a week will let me test things out and see results. If I like what I see and feel, who knows? Maybe I will be able to completely change my diet and eating habits!

Eating clean will be a serious challenge, but I plan to take it on starting Monday. I chose Monday because I want a few days to prepare and I want to enjoy Easter dinner with my family (without preparing myself a totally separate meal).

To get ready for the challenge I need to do some serious grocery shopping! All fruits and veggies. I will get my meat on campus at OSU because I can generally get fresh meat from there (lots of chicken), but I can’t get lots of fruits and veggies in a great enough variety.

Ready to take on clean eating? Here we go!

Here’s some inspirational clean Easter eats. Hard boiled eggs are amazing, and now you can enjoy them in a fun way!

Put hard boiled eggs in a bag of food coloring and water for 30 min, then take them out and peel the shell off. BEFORE putting them in the bag, crack the shell of the egg in many places, without having the shell come off. (It lets the color in) and VOILA! Pretty eggs 🙂

Happy Easter!

Today starts my mini Easter break from school. Technically, we don’t get any days off for the holiday, but I decided to skip class tomorrow and give myself a 4 day weekend (if we include today).

This weekend I can’t wait to spend time with my family and friends and just relax a little bit. Between my traveling and school work these past few weeks I don’t think I’ve slowed down and stopped to enjoy the wonderful world around me…

So, this weekend I want to take time to truly enjoy what’s around me and give thanks for everything I have. (Kind of like Thanksgiving, only this is Easter style!)

What a better way to start my mini break than curling up on the couch to watch a movie… The Princess Bride 🙂 I love this movie so much! We read the book and watched the movie in high school, and I always enjoy it whenever it’s on TV. I relaxed a bit and cleared my thoughts before heading out to work out.

I had every intention of attending a Zumba class this evening, but I only stayed for the Absurdity 1/2 hour class prior to Zumba. The ab workout was definitely a tough one! I really felt the burn, which is always a nice change. I try not to focus on my abs too much because I know a full body workout yields better results. But tonight, my abs got to feel the burn!

After the Absurdity class I realized I really wasn’t in the mood to do Zumba. Why force myself into something I wouldn’t enjoy? So I listened to my body and left. I went home to try the 100 burpee challenge. ( I hadn’t forgotten about my failure yesterday!) I was determined to finish and I did 🙂 I’m so proud of myself for pushing my body to my limits.

The challenge is broken into 25 reps of 4 types of burpees. I had trouble with the first 3 types (they involved full push-ups and touching your toe to fingertips when you came up, and also doing burpees to the side). After the first 3 types, the final burpees had plank jacks. I was proud of my finish, even if the challenge left me winded and exhausted!

The rest of my workout involved some jumping jacks, weight lifting, and kicking my punching bag. I’m satisfied with my at home workout- it started my weekend off on the right foot!

What I Ate Wednesday

I really like the idea of posting what I eat in a day… It might sound odd, but I feel like people are continually interested in what other people are eating. I mostly look at the foods other people consume to compare/contrast what I eat compared to them.

Overall, my diet is pretty healthy. I eat the amount I want of foods and I eat foods that work for me. I’m not on a “diet” by any means. I do use portion control and watch my consumption of foods that are high in fats and sugars. Honestly, I don’t even crave fried foods or anything similar anymore.

Chocolate, however, I crave endlessly. I satisfy my sweet tooth with gluten-free, whole grain options and portion controlled sizes of chocolate. I struggle, but I’m slowly waning myself off of the current amount of chocolate I eat.

I’m still taking classes at OSU, which means I’m forced to consume mainly dorm foods or dining hall foods. I do pretty well to choose my foods wisely, and I hope seeing my choices will help you choose better options in the future!

For breakfast I enjoyed fresh strawberries and honey nut cheerios with skim milk. If I were at home I would have enjoyed my Kashi cereal and almond milk, but I had to make do with what the campus grocery store was selling this week! I love fresh fruit for breakfast. Strawberries are my favorite because they offer so much natural sweetness and keep me from craving unhealthier options. (Do you like my fancy plastic silverware and tupperware bowls?) 😉

My morning pick-me-up was my frozen vanilla latte. I order it light- so I get skim milk, sugar free syrup, light powder, and coffee. I like the taste of the light version much better than regular! I don’t get coffee every day, but today I definitely needed an energy boost. I drank it about an hour and a half before I worked out.

During class I enjoyed this delicious gluten-free cookie! It’s my latest healthier option on campus and I can’t say enough good things about it. The ingredients are all whole grain and all natural. They taste delicious! I had mine an hour before I went to workout.

Here are the stats for my workout of the day (WOTD). Today I mainly focused my arms- lifting heavier than usual. That kept me in the fat burning zone. I also was on the elliptical doing interval training for about a half an hour. Afterwards I attempted the PurelyTwins challenge to do 100 burpees. (see purelytwins.com for the full workout.) I got through 50 burpees before calling it quits! I was already spent after the weight lifting and cardio, so I cut my workout off after 59 min.

I’m really satisfied with my progress. I like having visual, graphical feedback after my workout. Getting the Polar FT40 has been a blessing.

IMG_3916Post workout I refueled with a delicious mixed greens, veggie, and chicken salad. I had to order the chicken breast and salad separate, then combine them myself. The salad was delicious! It was very fresh and satisfied my hunger. I ended up putting a little fat-free italian and fat-free ranch dressing on the salad for flavor. yum!

I worked on homework steadily today until my stomach was growling with hunger. My body needed refueled! I bought a turkey, provolone, and tomato panini. It was very delicious, but a little to salty and greasy for my taste. I wish I had a kitchen to make it myself….

For dessert I tried the skinny cow chocolate fudge brownie ice cream. I love that skinny cow ice cream is always in the perfect portion size. I did eat the whole carton, but it was so tiny and guilt-free.

Like I said, I don’t eat 100% clean, but I’m working my way to that point. Living on campus puts many restrictions on what types of healthy foods I can purchase. I have a meal plan that I have to use and buy items with. I can’t wait to move home for the summer and truly start to transform my diet.

I am happy with how tone my body has become and I’m excited to push forward. I thank God every day for giving me the strength to exercise and eat right. Every day is a challenge, but it is worth it for the results!

Yesterday was a super exciting day. Why? Because my Polar FT40 heart rate monitor came in the mail! With my luck, the HRM was delivered right after I was done with my workout for yesterday, so I didn’t get to try it out until today.

Yesterday I was able to analyze everything it came with and read up on all the manuals and watch all of the videos related to it. It came in a small box, which surprised me because I knew it contained a strap that went around my waist. How did it all fit in the little box? Well, it did much to my shock!

First things first, I had to set up all of the background information. Programming the date, time, height, weight, etc. took a total of 3 min. It wouldn’t take a genius to do the set up of the watch, and I loved its conveniency.

Next, I needed to take the fitness test. You’re probably thinking, oh no how difficult is that?! Honestly, it’s as east as laying down for 5 min. No joke. You put the HRM on your waist (actually just below your sports bra) and hit the start button. I had to lie still for 5 min and it tested my heart rate. According to the fitness test, my number is 53, and anything above 51 is elite! I was happy to see that I made it into the “elite” category.

A few interesting tid bits about the HRM and watch…

The HRM needs to be wetted down with water before being put around your torso very snug. They aren’t messing around when they say to have it fit tightly and make sure it is completely sealed against your chest. My first attempt at the fitness test was actually a failure because I didn’t have the HRM sealed against my chest (I didn’t use enough water, lesson learned!).

Today I worked out with the HRM and watch and found it easy to use and easy to read. Starting the work out means pressing the “ok” button twice. The watch detects your heart rate and you’re good to go! I like that there is a pause button, just in case your work out is interrupted you press pause.

During the workout you can change between different views. The regular view tells your heart rate and whether you’re in fat burning mode or fitness mode (I’ll explain those in a bit!). I kept my watch at the normal view, but I also changed it to the calories burned view, the heart rate view, and the % fat burned view. I thought it was easy to read and helpful!

Fat burned vs. Fitness is based on heart rate. When you’re in the fitness zone you have a much higher heart rate and are increasing endurance. Also, in that zone you burn up and use more carbohydrates. During fat burning zone, you are burning more fat and your heart rate is generally lower. I stayed in the fat burning zone for about 10 min, which was only while I was doing my ab exercises and lifting other weights. I was in fitness zone majority of the time, and during my workout today I spent 35 min on the elliptical for cardio.

Overall I highly recommend the Polar FT40 to anyone increasing their fitness level. I like that I can keep track of all my work with exact numbers, and see my progress much more easily. I like that the watch is easy to use and operate. The HRM around my torso was hardly noticeable (it just felt like my sports bra strap… perhaps men would notice it being there more than women?).

I can’t wait to continue to share my stats with each workout I complete! 🙂
